Somerset Cottage Christmas has become quite a Silver Bubbles tradition. During the year Rick and Anne present various world famous cookschools and I have the priviledge of designing the table settings with a festive theme. The cookschools tend to run three times a week for the twelve or so weeks leading up to Christmas, so it is my mission to construct interesting, thought provoking table settings with a touch of sparkle. Depending on flower availability I try to select flowers that will last the week and during that time evolve into their own. Each week can be different styles, colours as there is always a surprise or two. The designs need to be easy for the Somerset Team to handle, placing them around the restaurant when the cookschool isn't running.
